IS there a Perfect Cheesecake??…………………………. I ate my first cheesecake at a dimly lit restaurant in my hometown.I was nine then but i still remember it….. the feel of the creamy soft cream-cheese in my mouth and the buttery biscuit at the bottom.I ate with my hands forgetting bout the fork at the side or my table manners.It was love… love at first taste.
That, from that moment onwards , my hunt for the perfect cheesecake began…
I went through cheesecake after cheesecake devouring them all but something was every time not right.The biscuit wouldn’t be crumbly or buttery or the cream cheese would be kinda sour or dense; one day to my horror i even got served a two day old cheesecake.It had become an obsession. I tried making it myself but i knew i didn’t have the skills to make it .Wherever i traveled i always ate cheesecakes there.I ve tried every kind of cheesecake from Japanese souffle to french cheesecakes. i have tried every different flavor including savory ones but my favorite has always been the Classic Cheesecake .I thought i would soon start despising cheesecakes as i grew older since i had eaten so many but the more i ate ,the more i liked it , more things i began noticing like the texture and the temperature when it was made ,do they put eggs and if yes then what kind,how many different kinds of cream and stuff..and then in the winter of 2017 i found it…..The perfect mind wavering,mouth watering Cheese cake.
The day was cold and stormy although not quite humid.A perfect day to eat a cheesecake i thought and laughed to myself.My phone rang and an old friend of mine was visiting the town and she wanted to catch up and check out a small newish cafe 20 miles from there.I agreed and we met up at the station and took a metro to the place.
The place was a cozy ,small cafe fully furbished with wood and yellow lights dangling on the window sills perfectly creating a magical setting.The aroma of coffee was strong with a hint of cinnamon.The place was festively decorated as Christmas was just a week away, there were hardly any people here though.I scanned the menu and alas there was no sign of a cheesecake.My friend jokingly told the owner who was now sitting with us bout my little obsession. Then he smiled and said that he thinks he knows what i want.He soon disappeared into the kitchen and ten minutes later he came carrying two plates of cheesecakes.He placed it in front of me and urged me to try it.He said that it was his great grandfather’s recipe.I picked up the fork and the cut the cake smoothly with it.I inspected the cheesecake on the fork and then put it in my mouth…it was heavenly.The cheese had almost three distinct layers.the top was kinda creamy and glazed ,the middle was light and fluffy and melt in the mouth type wheres the small bottom part was heavy and fresh cream.Just when i thought that it was awesomely delicious and did not need anything else,i tasted the buttery ,crumbly and moist biscuit tart structure at the bottom of it all which balanced the creamy cheese nicely.I could also taste a hint of lemon which i think must have been squeezed and sprayed on the cheesecake to give it the perfect acidity so that the heavy creme would not overwhelm the person eating it.I could not find any error in it.At last i had finally found my perfect Cheesecake. It was well an early, magical Christmas miracle……..
